A couple of months back I made a trip to San Francisco and of course enjoyed a little chocolate from the Ghirardelli store. Have you had the decadent sipping chocolate? It is divine.
These are a few of my favorite things from the factory: hot fudge sauce, chocolate squares and chocolate covered blueberries, cherries and strawberries.Â But my very favorite thing to make is fudge with Ghirardelli chocolate chips.
I am sharing with you the best fudge recipe ever…no kidding. Follow the steps below and this recipe is fool proof. Warning: you will never buy fudge again because nothing will compare. Â The recipe is original and created for our Eye Candy quilt book by Kim Goeckeritz. I thought I would share it because the quilt book is long gone.
12 oz. Semi-sweet Chocolate Chips (I only use Ghirardelli chips)
2oz. unsweetened chocolate finely chopped
1/2 cup cold, unsalted butter
12 oz. (1 1/2 cups) cream
12 large marshmallows
2 cups of sugar
1/4 tsp. salt
1 cup powdered sugar, divided
1/4 cup cream
1/2 cup of chopped walnuts
2 cups of mini marshmallows
line a 9X9 pan with parchment paper. Place the chocolate chips unsweetened chocolate, butter and vanilla in the bowl of an electric stand mixer. Set aside. In a 4 qt. non-stick saucepan combine 1 1/2 c cream, large marshmallows, sugar and salt heat until mixture boils. Reduce heat to medium and cook until mixture reaches 230 degrees. Remove from heat and immediately pour over the chocolate butter mixture. Do not scrape the mixture from the pan. Stir by hand until the wire whisk attachment on your mixer and mix on medium speed for 30 seconds.Â Add 1/2 c. powdered sugar and mix for 30 seconds.Â With the mixer running, slowly drizzle in 1/4 c. cream.Â Add remaining 1/2 c. powdered sugar and beat until smooth and glossy, about 1 minute. Hand stir in the nuts and mini marshmallows and pour into the prepared pan. Cover and refrigerate for at least 2 hours before cutting/serving. Store in the refrigerator.
